It is undoubtedly the most famous dish of Yucatecan cuisine. It's basically about marinated pork in achiote that was traditionally cooked in an undercut furnace and inside banana leaves. It is usually eaten that way or it is served with tacos. It is also accompanied with habanero chili sauce, sour orange and with chopped purple onion.

Another dish very typical of the Yucatan Peninsula. It is a soup that is prepared with lemon juice, Chicken, tortilla strips, onion, cilantro, avocado, chicken and garlic. The taste is quite strong, but it is perfect to take it before the main course, or when you are tired of so much meat (a soup always heats the body and rejoices the spirit).

A simple dish but full of flavor, is one of the snacks (something like tapas) most popular in the region, and one of Rober's favorite Mexican dishes. The panuchos are corn tortillas stuffed with beans and fried, which are seasoned with meat (cochinita pibil, chicken, roast beef ...) and lettuce, onion, avocado, tomato and a spicy habanero pepper sauce.

Do you know why they are called that? They told us that his "inventor" was called Ucho and when people went to his house before a trip, they asked him "give us bread, Ucho!". One day he ran out of food and decided to fry some old corn tortillas and he did it by filling them with beans so that they had more flavor. Then he put the other ingredients and voila: people began to always ask for the same food, the XD panuchos

The main ingredient of this dish is the pumpkin seeds and epazote sauce with which some egg-filled tortillas are accompanied, although they can also carry other ingredients such as meat or cheese. They are served coated with tomato sauce. It is a fairly soft meal that we recommend you try, at least once.

These fried eggs are possibly the Yucatan's most typical breakfast, they are accompanied by a sauce of peppers and tomatoes and with various toppings (cheese, ham, beans, sausage ...). They are served on top of tortillas.

It is another dish that we loved. Is about pork chops Marinated in sour orange and cooked on the grill. It is served cut into pieces or whole accompanied by rice, salad, beans, chopped roasted onion, tomato, cilantro and a sauce that is prepared with sour orange, tomato, coriander and onion.

We were very surprised to see that one of the typical dishes of Yucatan had as its main protagonist theEuropean cheese... but as we told you, the Yucatecan incorporated many ingredients from the old continent into many recipes. And this is a perfect example. Stuffed cheese is prepared with Baked Ball Cheese. The funny thing is that the cheese is stuffed with meat and spices and it is served with a sauce made with broth, flour and butter.

It is a dish that consists of marinated chicken or turkey in a sauce of coriander, anela, vinegar, cumin, salt, pepper and garlic. The meat is then cooked in water and Orange juice sour and finally fry in butter Garnished with garlic and herbs.

At first glance you can look like panuchos, but they differ by the tortilla dough. In this case it is fried and swells a little, staying quite tender, while the panuchos are rather crispy. It is served with sauce and with various ingredients such as lettuce, tomato, onion, avocados and meat.

It is not a typical Yucatan dish, but here it is also common and also has a great secret ... and no, it is not the fish / seafood, but the local lime juice, much sweeter than lime from other sites. The ceviche can be taken as an appetizer or as a main dish, and for those who still do not know, it is seafood or raw fish that is marinated, and therefore it is cooked, in citrus juice.
